Boureki with syrup

Ingredients:

Ply
700gr. flour hard
300gr. flour yellow
80ml olive oil
10g salt
500ml of water
Stuffing
1 tablespoon sweet myzithra
100g sugar
1 teaspoon of cinnamon
1 egg
1 vanilla
Syrup
400ml of water
400g sugar
Peels of a lemon

Handmade sheet

In a bowl, pour the oil and flour after sifting. Then, and slowly, add the water and knead until the dough becomes fluffy and soft. Leave it for about an hour to rest. Divide the dough into three balls. Apply flour to the surface, over which you will open the sheet with the help of the rolling pin. The sheet must be larger than the surface of the pan.  Grease the baking pan with oil, put the sheet, grease the sheet with oil and place the second sheet over.

For the filling:

In a bowl, place the mizithra along with the rest of the ingredients. Stir well, and spread the mixture on the baking pan. Τurn over the remaining parts of the second sheet on the mixture. Then spread oil and put the third sheet. Turn over the remaining parts of the first sheet, which is placed at the bottom of the pan and create the cochlea. Spread oil to the boureki and sprinkle it with some water. Then cut the pieces and place the pan in a preheated oven. Bake to 160 degrees with air for about an hour.

For the syrup:

In a small saucepan, put the ingredients for our syrup and boil for 5 minutes.

When the boureki is baked, pour the syrup into it. Take care if the syrup is cold, then the boureki must be warm. Or vice versa.

Leave the pan for about an hour, and then serve.
