Ingredients:
- 1 κιλό μπακαλιάρο ξηρό
- 1-2 καρότα
- 2-3 πατάτες μικρές
- 2 λεμόνια
- 1 κουταλάκι αλεύρι
- 2-3 κρεμμύδια
- 1 ρίζα και 2-3 κλωνάρια σέλινο
- 2 αυγά
- 75 γρ. λάδι
- 1 ματσάκι μαϊντανό
Preparation Method:
The day before, cut the cod and put it in a bowl of water. Change the water 3-4 times. Peel and chop onions, potatoes, carrots, and chop celery. Put them in a saucepan and boil. When they boil, remove them from the pan and hold the broth. Then we put the codpieces after we have scraped them off the scales first. Boil for about 20 minutes. When the cod is boiling, remove it and strain the broth.
Then put the broth back into the pot, and pour the flour, which we have dissolved in cold water. Mix well with a wooden spoon. Beat the eggs and add the lemon and a few tablespoons of the broth.
Remove the pan from the heat and pour the new mixture. Stir well for a few minutes.
Place the cod in a platter, garnish with vegetables and sprinkle with olive oil. Sprinkle with chopped parsley.
