Ingredients:
- 2 small potatoes, preferably new crop and organic.
- 1 medium tomato
- ½ green pepper
- ½ cucumber
- ½ medium onion,
- 10 olives
- 1-2 fresh eggs
- Salt
- Olive oil 2-3 tablespoons
- Vinegar 1-2 tablespoons
- Capers
Preparation Method:
Wash the potatoes very well and let them boil with the peel until soft. At the same time, we boil the eggs. We chop the tomatoes, cucumber, green pepper, and onion. We add salt and the olives, the eggs, and the capers.
Finally, pour with oil and vinegar.
