Askolibrous is a wonderful, wild grass. It has white roots and is collected from spiny shrubs. It grows in many places, but usually, only here in Crete eat it. Since the ancient time, it has been used for medical reasons. You can boil the askolibrous and drink the water like a beverage.
Ingredients:
- 300 g beans small
- 100 g olive oil
- 1 kg of askolibrous
- 4 tablespoons of lemon juice
- Salt
Preparation Method:
Let the broad beans in the water to soften for 8 hours. Then, strain them and leave them for 25-30 minutes, put them in boiling water. Chop the askolibrous into large pieces and boil them separately for 10 minutes. Beat the lemon, with olive oil and salt, to become a sauce. Serve the broad beans with askolibrous on a platter and pour over the sauce.
