• 1 kg of snails
  • 4 potatoes cut into four
  • 2 chopped tomatoes
  • 1 large bunch of fennel
  • 1 large chopped onion
  • 3 tablespoons red wine
  • ¾ cup olive oil
  • Salt Pepper

Preparation Method:

Put the snails in a large bowl of lukewarm water, cover with a towel and leave for 30 minutes. When we see them move, we remove the thick film from their mouthpiece and any dirt from their shell. Wash them very well and then boil them in salt water for 10 minutes. Then, put them in a colander to drain their liquids.

In a saucepan sauté the onion with olive oil, fennel, and whisk with the wine. Then add 1 cup of water and simmer for 25 minutes. Add the potatoes, snails, tomatoes, salt, and pepper.

Continue boiling for 30 minutes over medium heat.
