Giouvetsi or Youvetsi is a baked Greek dish made with chicken, lamb or beef and pasta, either kritharaki (orzo) or hilopites , and tomato sauce. Other common ingredients include onions/shallots, garlic, beef stock, and red wine, as well as some cheese to serve.

Ingredients:

1kg of meat, cubed

1 large onion

4 cups tomato juice

1/2 oil

1 packet orzo pasta

1/4 cognac

grated cheese to sprinkle

a little oil for the pasta

For the meat marinade:

2 water glasses red wine

1 onion

pepper

3 bay leaves

1 carrot

lemon rod of one lemon

Preparation method:

Put the meat with the ingredients for marinating in a bowl and leave it in the refrigerator all night. Heat the oil and brown the meat. Remove the meat and add the onion and sauté until it gets brown. Put again the meat to the pot and add cognac, and add half the broth from the marinade. Add nutmeg, sugar, and pepper. Close the pot and let the food boil for about 2 hours.

Preheat the oven to 200 degrees. In a claypan or pyrex, add the 3 cups of warm water, a little salt, a little oil and a small portion of the meat sauce and the orzo, stir and leave in the oven for 15 minutes. We watch it, because we may need to add water. When the orzo is half ready, add the meat and add the remaining sauce from the meat. Let it for a few minutes, boil the orzo and tie the sauce and it is ready.

Serve it on a platter, and sprinkle it with fried cheese.
