• 4 zucchini large
  • 1 chopped dry onion
  • 3-4 chopped onions
  • Or a bunch of chopped mints
  • Or a bunch of chopped parsley
  • Or a bunch of dills finely chopped
  • 2 eggs beaten
  • 200 grams of feta cheese
  • salt
  • freshly grated pepper
  • 4 tablespoons full of flour that inflate on its own
  • olive oil for frying

Preparation Method:

Wash the zucchini thoroughly, rub in a coarse grater and put in a strainer. Sprinkle with salt and leave for 10 minutes. Spread them well to remove the liquids and put them in a bowl. Then add the onions, mint, parsley, dill, whipped eggs, feta cheese, salt, and pepper. Mix well with a spoon and add flour until it becomes a thin slurry.

Heat the olive oil over medium to high heat and, then, pour the spoonful of the mixture. Fry for 2 minutes on both sides. Let them drain on absorbent paper and serve them cold or hot, accompanied by a yogurt dip.
